Espresso
An espresso machine is a device that is designed to brew a small, concentrated shot of coffee called an espresso. Espresso machines use pressure to force hot water through finely ground coffee beans, resulting in a rich, flavorful shot of coffee with a layer of crema on top.
Espresso machines come in a variety of styles, from manual lever machines to semi-automatic and fully automatic models. Some espresso machines are designed for home use, while others are intended for commercial use in cafes and restaurants.
WHAT YOU NEED
Chaffless coffee (18-20 grams)
Espresso machine with portafilter
Grinder
Tamper
Timer
Scale
Demitasse or espresso cup
1st step: Clean and prepare the portafilter
Remove the portafilter from the espresso machine and ensure it's clean and dry. Place it on the scale and tare the weight.
2nd step: Purge the grouphead
Run hot water through the grouphead to preheat the espresso machine and ensure optimal brewing temperature.
3rd step: Grind and dose chaffless coffee
Grind approximately 18-20 grams of chaffless coffee to a fine consistency, similar to powdered sugar. Transfer the ground coffee into the portafilter. Gently tap the portafilter to settle the grounds.
4th step: Tamp the coffee grounds
Position the tamper level on top of the grounds in the portafilter. Apply firm, even pressure (about 20-30 lbs of pressure) to compress the grounds. Give the tamper a gentle twist to polish the surface for a more uniform extraction.
5th step: Attach the portafilter and start the shot
Secure the portafilter in the group head of the espresso machine. Place the demitasse or espresso cup under the portafilter and start the timer. Engage the group head to begin the extraction process. (Using a scale is preferred)
6th step: Monitor the extraction
Observe the flow of espresso as it streams from the portafilter. It should resemble thin and steady. Aim for a total extraction time of 23-28 seconds, yielding about 1.5 ounces of espresso. Adjust the grind size accordingly if the extraction is too fast or slow. (For example, for 20g of coffee, we aim for 35g to 40g of output)
7th step: Serve and enjoy
Once the extraction is complete, enjoy your espresso! Some prefer to stir the shot to blend the flavors, while others enjoy sipping it immediately to experience the distinct layers. Serve with a sparkling water, if desired.
